Lemon and Herb Salmon

2 salmon fillets with skin

1 lemon, sliced

4 fresh thyme sprigs 

2 fresh rosemary sprigs

2 cloves of garlic, minced

canola oil

Preheat canola oil (amount that you desire) in a pan over medium heat. Begin flavoring the oil by adding lemon slices, minced garlic and herb sprigs until aromatic. 

Add salmon, flesh side down. Cook fillets for 3 to 4 minutes, depending on thickness. During this time, continue to stir lemon slices and herbs around the fillets. 

When salmon comes loose from the pan, flip. Continue cooking for another 3 to 4 minutes, until skin is crispy. Serve with your favorite sides – bacon wrapped asparagus is always an easy fix, and you can never go wrong with garlic mashed potatoes. 

(Please excuse the beautiful dinnerware – we are still living the camper life!) This is a wonderful dish full of flavor using simple ingredients. You can substitute your favorite herbs or even used dried ones on hand. Enjoy!
